Scrambled sandwich step by step
- First, cut up the green peppers, jalapeños, tomatoes and onions into small cubes and put them in a frying pan with salted butter on mild heat. While the veggies are cooking, cut and drain the tofu. The tofu should be cut into cubes and then mashed lightly with a fork. Turn up the heat on the frying pan and throw the tofu in with the veggies. Meanwhile, throw in all the spices and add as you go by taste..
- While the tofu is cooking make your scrambled egg mix. Whisk together 2 eggs, milk, maple syrup and salt, and add some spices also if you want, it helps everything come together easier..
- When the tofu is dried out and getting light brown on the edges that means it's almost done, so now is when you would combine the egg mixture into the tofu pan, just let it all scramble and cook together..
- When eggs are done cooking take everything off the pan and put it into and bowl and put in the microwave so all the heat stays..
- Now if you have 2 separate frying pans you can do it all at once and time it correctly but if not then while the tofu and eggs are in the microwave, throw the bacon on the pan and fry it up till slightly crispy it however you like your bacon and if you have room you can start with the bread..
- Grab 2 slices of bread and butter one side of each and place the buttered sides on the pan and put cheese on the other and let it melt. By the time the cheese melts, the bacon should be done..
- Take the bread, put the tofu and egg scramble on top on it on one side and then put the bacon of top of the eggs and tofu and put some BBQ sauce or Smoked Chipotle Yeshi sauce and place the other bread on top to finish it all off..
